  • 8 corn tortillas or soft flour tortillas
  • 2 ripe avocados, diced
  • 2 tbsp lime juice (freshly squeezed)

  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced butternut squash in olive oil, chili powder, cumin, salt, and pepper until evenly coated.
  3. Spread the seasoned squash on a parchment-lined baking sheet and roast for 25-30 minutes until tender and caramelized, stirring halfway through.
  4. While the squash is roasting, prepare the avocado salsa by mixing diced avocados, chopped cilantro, lime juice, and any additional toppings you desire.
  5. Warm your taco shells in a skillet or microwave.
  6. Fill each shell with roasted butternut squash and top with avocado salsa. Garnish with extra lime wedges or cilantro if desired.
