  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh pumpkin, cubed
  • 4 cups mixed greens (spinach, arugula, and kale)
  • 1 medium red onion, thinly sliced
  • 2 tbsp extra virgin olive oil (divided)
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss pumpkin cubes in 1 tbsp olive oil, salt, and pepper. Spread evenly on the baking sheet and roast for about 25 minutes until fork-tender.
  3. Season chicken breasts with salt and pepper. Heat remaining olive oil in a skillet over medium heat and cook chicken for about 6 minutes per side until golden brown and cooked through.
  4. In a small bowl, whisk together balsamic vinegar, honey, mustard, olive oil, salt, and pepper to create the dressing.
  5. In a large bowl, combine mixed greens, roasted pumpkin, sliced red onion, and diced chicken. Drizzle with dressing and toss gently.
