Instructions

  1. Prepare the Dough: In a bowl, mix flour and salt. Create a well, add the egg, and gradually pour in warm water while mixing until it forms a soft dough. Knead on floured surface for about 5 minutes.
  2. Cook the Potatoes: Boil potatoes in salted water until tender (about 15 minutes). Drain and mash; stir in cheddar cheese until melted.
  3. Roll Out the Dough: On a floured surface, roll out dough to an eighth-inch thickness. Cut circles using a round cutter.
  4. Cut and Fill: Place one tablespoon of filling on each circle; fold over and seal edges tightly.
  5. Boil the Pierogi: In boiling salted water, cook pierogi until they float (3-5 minutes).
  6. Serve It Up: Garnish boiled pierogi with sour cream and crispy bacon bits before enjoying.
