  • 1 cup dried apricots, chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 4 cups vegetable broth
  • 1 tsp cumin
  • ½ tsp cinnamon
  • ½ tsp turmeric
  • Salt and pepper to taste
  • 2 tbsp olive oil for sautéing
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the diced onion until translucent (about 5 minutes). Add minced garlic and diced carrots; cook until fragrant.
  2. Stir in lentils, cumin, cinnamon, and turmeric. Toast the spices for about 2 minutes.
  3. Pour in vegetable broth and add chopped apricots. Bring to a gentle boil.
  4. Reduce heat to low, cover the pot, and simmer for 30–35 minutes until lentils are tender but hold their shape. Stir occasionally.
  5. Season with salt and pepper as desired; adjust sweetness by adding more apricots if necessary.
  6. Serve in bowls garnished with fresh cilantro.
