  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 medium Yukon Gold potatoes, diced
  • 1 can (28 oz) whole peeled tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 2 tbsp olive oil
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Wash and chop all vegetables into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil. Sauté onions and minced garlic until fragrant (about 2 minutes).
  3. Add zucchini, carrots, celery, and potatoes; cook for about 5 minutes until slightly tender.
  4. Stir in canned tomatoes (crushed) and vegetable broth; bring to a simmer.
  5. Mix in cannellini beans, salt, pepper, basil, and parsley; let simmer for an additional 10 minutes.
