  • 8 oz penne pasta
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 1 cup heavy cream (or half-and-half)
  • 1 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • ½ tsp red pepper flakes
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Cook the penne pasta in salted boiling water until al dente according to package instructions. Drain and set aside.
  3. In a skillet over medium heat, melt the butter. Add minced garlic and red pepper flakes; sauté for about one minute until fragrant.
  4. Add shrimp to the skillet and cook until pink (about 3–4 minutes).
  5. Reduce heat to low, then stir in heavy cream, lemon juice, and Parmesan cheese until smooth. Season with salt and pepper.
  6. Combine cooked pasta with the shrimp mixture; toss gently to coat.
  7. Transfer to the prepared baking dish, top with additional Parmesan cheese, and bake for 20 minutes or until golden brown.
