  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 5 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup orzo pasta
  • 1 cup broccolini, trimmed
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. Cut chicken breasts into bite-sized cubes. In a bowl, toss with olive oil, minced garlic, salt, pepper, and half of the Parmesan. Mix well.
  3. Cook orzo in boiling salted water according to package instructions until al dente; drain and set aside.

  5. Sauté broccolini in olive oil over medium heat for about 5 minutes until bright green and crisp.
