  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 3 medium carrots, sliced into rounds
  • 2 medium Yukon Gold potatoes, diced
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 2 bay leaves
  • 2 tbsp olive oil

Instructions

  1. Prepare ingredients: Chop beef into uniform pieces, slice carrots and dice potatoes.
  2. Brown the beef: Heat olive oil in a large pot over medium-high heat. Add beef in batches and sear until browned on all sides. Remove from pot.
  3. Sauté vegetables: In the same pot, add onions and garlic; sauté until fragrant (about 5 minutes).
  4. Combine: Return beef to the pot with carrots and potatoes. Stir in tomato paste; pour in enough broth to cover everything.
  5. Season: Add thyme and bay leaves; bring to a gentle simmer.
  6. Simmer: Cover loosely and let cook on low heat for at least one hour, stirring occasionally. Remove bay leaves before serving.
