Ingredients

Scale
  • 3 boneless, skinless chicken breasts (about 1.5 pounds)
  • 3 cloves garlic, minced
  • ¼ cup freshly squeezed lemon juice (about 2 lemons)
  • 2 tsp dried oregano
  • ¼ cup extra virgin olive oil
  • 1 cup full-fat Greek yogurt
  • 1 cucumber, grated
  • 2 tbsp fresh dill, chopped
  • Salt and pepper to taste
  • Pita bread and fresh vegetables (lettuce, tomato, red onion) for serving

Instructions

  1. 1. Marinate the Chicken: Mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Add chicken breasts and marinate for at least one hour or overnight.
  2. 2. Prepare Your Grill or Oven: Preheat grill to medium-high heat or oven to 400°F (200°C). Line a baking sheet with parchment paper if using the oven.
  3. 3. Cook the Chicken: Remove chicken from marinade and grill each side for about six minutes until cooked through (internal temperature should reach 165°F) or bake for about twenty-five minutes.
  4. 4. Make the Tzatziki Sauce: In a bowl, combine Greek yogurt, grated cucumber (squeeze out excess moisture), minced garlic, dill, lemon juice, salt, and pepper. Mix well and refrigerate until ready to serve.
  5. 5. Slice and Serve: Let chicken rest for five minutes before slicing into strips. Warm pita bread briefly on the grill or microwave.
  6. 6. Assemble Your Gyros: Place chicken strips on pita bread, top with tzatziki sauce and additional toppings as desired. Wrap and enjoy!
