  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup fresh parsley, chopped
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1/2 tsp crushed red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Pat the chicken breasts dry and season both sides with salt and pepper.
  3. In a bowl, mix chopped parsley, minced garlic, red wine vinegar, olive oil, and crushed red pepper flakes until well combined.
  4. Place the seasoned chicken in the baking dish and drizzle half of the chimichurri sauce over it.
