  • 4 large bell peppers (red, yellow, or green)
  • 1 cup fresh button mushrooms, finely chopped
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a skillet over medium heat, heat olive oil. Sauté onion and garlic until fragrant. Add chopped mushrooms and cook until tender.
  3. In a bowl, mix the mushroom mixture with cooked rice and half of the cheese. Season with salt and pepper.
  4. Cut the tops off the bell peppers and remove seeds. Place them upright in the baking dish.
  5. Generously stuff each pepper with the filling and top with remaining cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until golden.
