  • 1 cup fresh blackberries
  • 3 cloves garlic, minced
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Heat olive oil in a skillet over medium-high heat. Season the pork with salt and pepper, then sear on all sides until golden brown (about 3-4 minutes per side).
  3. In a saucepan, combine blackberries, garlic, balsamic vinegar, honey, salt, and pepper. Cook over medium heat until the blackberries break down (5-7 minutes).
  4. Transfer the seared pork to the baking dish and pour half of the blackberry sauce over it. Bake for 20-25 minutes until the internal temperature reaches 145°F (63°C).
  5. Let the pork rest for 5 minutes before slicing. Serve with remaining sauce drizzled on top.
