  • 2 cans (15 oz each) chickpeas, rinsed and drained
  • 3 tbsp extra virgin olive oil
  • 2 tbsp harissa paste (adjust for spice preference)
  • 1 cup Greek yogurt (preferably full-fat)
  • Juice of 1 lemon
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, toss cauliflower florets and chickpeas with olive oil, cumin, salt, and pepper until evenly coated.
