  • 1 lb lean ground beef or turkey
  • 2 cups cooked rice (white or brown)
  • 1 packet (1 oz) taco seasoning
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream (or Greek yogurt)
  • ¼ cup chopped green onions

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat, then add taco seasoning and diced tomatoes; stir for 5 minutes.
  3. In a bowl, combine cooked rice with the meat mixture until well mixed.
  4. Layer half of the rice mixture in the baking dish, sprinkle with half of the cheese, add the remaining rice mixture, and top with more cheese.
  5. Cover with foil and bake for 25 minutes, then remove foil and bake an additional 10 minutes until golden brown.
  6. Let sit for 5 minutes before serving topped with sour cream and green onions.
