  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1/2 cup water (divided)
  • 2 1/4 tsp gelatin powder
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Grease an 8×8-inch baking dish with nonstick spray and dust lightly with powdered sugar.
  2. In a small bowl, combine gelatin powder with 1/2 cup cold water and let it bloom for five minutes.
  3. In a saucepan over medium heat, mix granulated sugar, corn syrup, and remaining water. Stir until dissolved and boil without stirring until it reaches 240°F (115°C).
  4. Remove from heat and pour the hot mixture into bloomed gelatin while mixing on low speed with an electric mixer. Gradually increase the speed until stiff peaks form (about ten minutes).
  5. Add vanilla extract during the last minute of mixing. Optionally, mix in food coloring for added fun.
  6. Pour the mixture into the prepared dish, spread evenly, dust the top with powdered sugar, cover with plastic wrap, and let it set at room temperature for at least four hours or overnight.
  7. Once set, cut into squares or desired shapes and enjoy!
