  • 2 medium sweet potatoes (about 1 lb), peeled and diced
  • 2 tbsp olive oil, divided
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro (optional), for garnish

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, garlic powder, chili powder, salt, and pepper until evenly coated. Spread them on the prepared baking sheet.
