  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 large egg
  • Salt and pepper to taste
  • 6 cups low-sodium chicken broth
  • 3 cups fresh spinach or kale
  • 1 cup acini di pepe pasta
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Instructions

  1. In a large bowl, mix ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, salt, and pepper. Form into small meatballs (about 1 inch).
  2. Heat olive oil in a large pot over medium heat. Brown meatballs for about 5-7 minutes; remove and set aside.
  3. In the same pot, sauté onion and garlic until translucent (3-4 minutes).
  4. Add chicken broth; bring to a gentle boil. Stir in spinach or kale.
  5. Add acini di pepe pasta; cook according to package instructions (8-10 minutes).
  6. Return meatballs during the last minute of cooking; adjust seasoning before serving.
