  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 4 medium carrots, sliced
  • 4 medium Yukon Gold potatoes, diced
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • 3 sprigs fresh thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot or Dutch oven over medium-high heat, add olive oil. Season beef chunks with salt and pepper. Brown the beef in batches for about 5 minutes per side until golden brown. Transfer to a plate.
  2. In the same pot, sauté chopped onions and minced garlic for about 3 minutes until fragrant.
  3. Add the browned beef back into the pot along with beef broth, bay leaves, and thyme. Bring to a simmer.
  4. Add sliced carrots and diced potatoes, cover partially with a lid, reduce heat to low, and simmer for about 2 hours until beef is tender.
