  • 1 lb beef chuck roast, cut into 1-inch cubes
  • 3/4 cup pearl barley
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 1 tsp dried thyme (or 2 tsp fresh)
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides, then remove from pot.
  2. In the same pot, sauté onions, carrots, and celery for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
  3. Pour in beef broth and add barley, seared beef, thyme, bay leaves, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer gently for about one hour until the beef is tender and barley is cooked through.
  5. Remove bay leaves before serving. Adjust seasoning if necessary.
