  • 2 lbs bison chuck roast, cut into bite-sized pieces
  • 3 medium carrots, chopped
  • 3 medium Yukon Gold potatoes, cubed
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the bison meat and vegetables, and mincing the garlic.
  2. Season the bison with salt and pepper. In a large pot, heat olive oil over medium-high heat. Sear the bison in batches until browned on all sides.
  3. Remove the seared bison and sauté onions and garlic in the same pot for about five minutes.
  4. Return the bison to the pot along with carrots, potatoes, tomato paste, broth, thyme, and bay leaves. Bring to a boil then reduce heat to low.
  5. Simmer covered for about two hours until the bison is tender.
  6. Remove bay leaves before serving. Garnish with fresh parsley if desired.
