  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Chop all vegetables: dice the onion, slice the carrots and celery, and mince the garlic.
  2. In a skillet over medium-high heat, sear the beef chuck roast on all sides until browned (about 5 minutes).
  3. In the slow cooker, combine lentils, chopped vegetables, minced garlic, thyme, bay leaves, and browned beef. Pour in beef broth until everything is submerged.
  4. Season with salt and pepper; stir gently to mix.
  5. Cover and cook on low for 8 hours or high for 4 hours.
