  • 1 lb lean ground beef (80/20)
  • 3 medium bell peppers (red, green, yellow), sliced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 1 can (15 oz) crushed tomatoes
  • 1 cup shredded cheddar cheese
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp Italian seasoning

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef with onions and garlic for about 5 minutes. Drain excess fat.
  3. Stir in uncooked rice, crushed tomatoes, salt, pepper, and Italian seasoning. Simmer on low while preparing bell peppers.
  4. Layer half of the beef mixture in the baking dish. Place sliced bell peppers on top and cover with the remaining beef mixture.
  5. Top generously with shredded cheddar cheese. Cover with aluminum foil and bake for 45 minutes.
  6. Remove foil during the last 10 minutes to allow the cheese to melt until golden brown. Serve hot.
