Ingredients

Scale
  • 4 large egg whites
  • 1 cup granulated sugar (preferably superfine)
  • 1 tablespoon cornstarch
  • 1 teaspoon white vinegar
  • 1 cup heavy cream
  • 1 cup mixed winter fruits (e.g., pomegranates, oranges, kiwis)

Instructions

  1. Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper and draw an 8-inch circle.
  2. In a clean bowl, beat egg whites until soft peaks form. Gradually add sugar until stiff peaks form and mixture is glossy.
  3. Gently fold in cornstarch and vinegar.
  4. Spoon or pipe the meringue into the circle on the baking sheet, creating swirls for texture.
  5. Bake for 1 hour and 15 minutes until firm but slightly soft in the center. Turn off the oven and let cool inside with the door ajar.
  6. Once cooled, whip heavy cream to soft peaks, then top the meringue with cream and arrange winter fruits.
