  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • 3 large eggs, room temperature
  • 1 cup buttermilk
  • 2 tsp vanilla extract
  • 8 oz dark chocolate, chopped
  • ¼ cup cornstarch
  • 2 cups powdered sugar, sifted
  • 8 oz cream cheese, softened

Instructions

  1. Preheat oven to 350°F (175°C). Grease two round cake pans and line bottoms with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, cream butter until fluffy. Add eggs one at a time; mix in buttermilk and vanilla.
  4. Gradually combine wet ingredients with dry ingredients until smooth.
  5. Divide batter into prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Let cool completely.
  6. For the pudding filling, melt dark chocolate over a double boiler. Mix cornstarch with sugar; whisk in milk and cook until thickened before adding melted chocolate. Let cool.
  7. Slice cooled cakes horizontally if desired. Spread pudding between layers and frost top and sides with cream cheese frosting.
