  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 2 tbsp blackening spice
  • 8 oz fettuccine or linguine pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 tbsp butter (2 tbsp for cooking chicken; 2 tbsp for sauce)
  • 3 cloves garlic, minced

Instructions

  1. Season chicken breasts with blackening spice on both sides. In a skillet, heat 2 tbsp of butter over medium-high heat and sear the chicken for about 5-7 minutes per side until charred and cooked through. Let rest before slicing.
  2. Cook pasta according to package instructions until al dente; reserve some pasta water before draining.
  3. In the same skillet, melt another 2 tbsp of butter over medium heat. Sauté minced garlic until fragrant, then add heavy cream and bring to a simmer.
  4. Stir in Parmesan cheese until melted and smooth. Add cooked pasta and sliced chicken; toss to combine, adding reserved pasta water as needed for desired consistency.
  5. Serve garnished with additional Parmesan cheese and black pepper.
