  • 1 cup mixed nuts (almonds, cashews, walnuts)
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1 cup dark chocolate chips (at least 70% cocoa)
  • 1/4 tsp sea salt (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, mix together the mixed nuts and rolled oats until well combined.
  3. In another bowl, whisk together honey (or maple syrup) and half of the dark chocolate chips until smooth. Pour over the nut mixture and stir until well coated.
  4. Transfer the mixture to the prepared baking dish and press down firmly with a spatula.
  5. Sprinkle remaining dark chocolate chips on top, pressing them into the mixture.
  6. Bake for 20-25 minutes or until golden brown. Allow to cool completely before cutting into bars.
