  • 2 cups powdered sugar (sifted)
  • 1 cup marshmallow fluff

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
  3. In another bowl, mix eggs, milk, vegetable oil, and vanilla extract until well combined.
  4. Gradually mix wet ingredients into the dry ingredients until just combined.
  5. Fill each cupcake liner about two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the frosting by beating softened butter until creamy; gradually add powdered sugar and marshmallow fluff until fluffy.
  7. Once cooled completely, frost generously and consider adding mini marshmallows on top.
