  • 2 tbsp unsalted butter
  • 1/2 cup shallots, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 4 cups fish stock (homemade preferred)
  • 1 cup heavy cream
  • 1 lb mixed seafood (shrimp, crab, lobster)
  • 1/4 cup white wine
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, melt the butter. Sauté the shallots and garlic until soft, about 3 minutes.
  2. Stir in tomato paste and cook for another minute.
  3. Pour in fish stock and scrape any bits from the bottom of the pot. Simmer for about 10 minutes.
  4. Reduce heat and stir in heavy cream; simmer gently for another 5 minutes.
  5. Add mixed seafood and gently stir for about 5 minutes until cooked through.
  6. Season with salt, pepper, and a splash of white wine before serving.
