  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse rice under cold water until clear. In a saucepan, combine rinsed rice and chicken broth. Bring to a boil, reduce heat to low and simmer covered for 15 minutes.
  2. In a skillet over medium heat, melt 3 tbsp butter. Add minced garlic and sauté for about 1 minute until fragrant. Add shrimp and cook for 2-3 minutes on each side until pink and opaque.
  3. Remove shrimp from skillet; add remaining butter and chicken broth to the pan. Scrape any bits from the bottom for flavor.
  4. Stir in parsley, dill, and lemon juice; return shrimp to the skillet and mix well.
  5. Fluff cooked rice with a fork, serve in bowls topped with garlic butter shrimp and drizzle with sauce.
