  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • ¼ cup granulated sugar (for crust)
  • 1 cup pumpkin puree (canned or homemade)
  • 16 oz cream cheese (softened)
  • 2 large eggs
  • ¾ cup granulated sugar (for filling)
  • 1 tsp cinnamon
  • ½ tsp nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press the mixture into the bottom of the prepared pan.
  3. In another bowl, beat softened cream cheese until smooth, then gradually add ¾ cup sugar, mixing until fluffy. Add eggs one at a time, beating well after each addition.
  4. Divide the mixture in half; fold pumpkin puree, cinnamon, and nutmeg into one half.
  5. Pour half of the plain cheesecake mixture over the crust followed by half of the pumpkin mixture. Repeat layers and use a knife to swirl them together.
  6. Bake for 30-35 minutes until set but slightly jiggly in the center. Cool completely before cutting into squares.
