  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar (divided)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • 2 tsp pure vanilla extract
  • 1 tsp peppermint extract
  • 1 cup crushed peppermint bark

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and ¼ cup of sugar. Press into the bottom of a greased springform pan.
  2. In another bowl, beat the cream cheese until smooth. Add sour cream, eggs, vanilla extract, peppermint extract, and remaining sugar; mix until fully incorporated.
  3. Gently fold in crushed peppermint bark.
  4. Pour the filling over the crust and spread evenly. Bake for about 45 minutes or until set but slightly jiggly in the center.
  5. Allow to cool completely at room temperature before refrigerating for at least four hours or overnight.
