  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 cup tart cherry filling (store-bought or homemade)
  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, mix flour, sugar, and melted butter until crumbly. Reserve 1 cup of this mixture.
  3. Press half of the crumb mixture into the bottom of the prepared dish.
  4. In another bowl, beat cream cheese until smooth. Add eggs, vanilla extract, and remaining sugar; mix until blended.
  5. Spread cheesecake filling over the crumb base and top with tart cherry filling.
  6. Sprinkle reserved crumb mixture on top and bake for 40-45 minutes or until golden brown. Allow to cool before slicing.
