  • 1 lb large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 2 tsp sriracha (adjust to taste)
  • 6 small corn or flour tortillas
  • 2 cups shredded cabbage
  • Juice of 1 lime

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In one bowl, mix flour with salt and pepper. In another bowl, place panko breadcrumbs.
  3. Dip each shrimp first in the flour mixture, then coat with panko breadcrumbs.
  4. Preheat air fryer to 400°F (200°C). Place coated shrimp in a single layer and cook for 8-10 minutes until golden brown.
  5. In a small bowl, whisk together mayonnaise, sweet chili sauce, and sriracha until smooth.
  6. Warm the tortillas and layer with cabbage slaw and crispy shrimp. Drizzle with bang bang sauce before serving.
