  • 2 tbsp olive oil
  • 1/4 cup brown sugar
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Trim excess fat from the pork tenderloin and slice it into medallions about one inch thick.
  2. In a bowl, combine apple cider, minced garlic, brown sugar, soy sauce, and thyme to create the marinade. Add the pork medallions and marinate for at least 30 minutes.
  3. Heat olive oil in a large skillet over medium-high heat. Remove the pork from the marinade (reserve the marinade) and sear medallions for about 3-4 minutes on each side until golden brown.
  4. Pour the reserved marinade into the skillet with the seared pork and bring to a gentle simmer for about five minutes until thickened.
