  • ½ cup brown sugar

  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • For the Streusel Topping: ¼ cup cold unsalted butter, cubed
  • ½ cup rolled oats
  • ¼ cup all-purpose flour
  • ¼ cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line muffin tins with paper liners or grease them.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, and melted butter until smooth.
  4. Gently fold in diced apples into the wet mixture.
  5. Combine the wet and dry mixtures until just mixed; avoid overmixing.
  6. For the streusel topping, mix cold butter with oats and flour until crumbly. Sprinkle on top of each muffin before baking.
  7. Bake for 20 to 25 minutes or until golden brown. Cool before serving.
