  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 cups fresh apples, diced (Granny Smith or Honeycrisp recommended)
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a rectangular baking pan with parchment paper.
  2. In a large bowl, cream together granulated sugar, brown sugar, and softened butter until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition until combined.
  4. In another bowl, whisk together flour, cinnamon, baking powder, and salt. Gradually add this mixture to the wet ingredients on low speed until just combined.
  5. Gently fold in the diced apples.
  6. Pour the batter into the prepared pan and smooth out the top. Bake for 25-30 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  7. Allow to cool slightly before cutting into squares.
