  • 2 tsp baking powder

  • 1 large egg
  • 1 cup plain yogurt (or Greek yogurt)
  • 1/2 cup milk (whole or almond)
  • 1 cup diced fresh apples (e.g., Granny Smith or Fuji)
  • 1 tsp cinnamon
  • 2 tbsp butter or oil (for cooking)

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  2. In another bowl, beat the egg and mix in yogurt and milk until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently fold until just combined; lumps are okay.
  4. Fold in diced apples.
  5. Heat a non-stick skillet over medium heat with butter/oil. Pour about half a cup of batter for each pancake.
  6. Cook until bubbles form on top (about 2 minutes), then flip and cook until golden brown (about 1 more minute).
  7. Serve warm with maple syrup or powdered sugar.
