  • 12 manicotti tubes
  • 1 ½ cups ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • ¼ cup chopped fresh parsley
  • 2 cups marinara sauce (store-bought or homemade)
  • ½ tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly coat a baking dish with nonstick spray.
  2. Boil salted water in a large pot, cook manicotti until al dente (about half package time), then drain carefully.
  3. In a bowl, mix ricotta, half of the mozzarella, Parmesan, egg, parsley, garlic powder, salt, and pepper until well combined.
  4. Stuff each manicotti tube generously with the filling using a piping bag or spoon.
  5. Spread some marinara sauce on the bottom of the baking dish, arrange stuffed manicotti on top, pour remaining sauce over them, and sprinkle with leftover mozzarella.
  6. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15-20 minutes until bubbly and golden brown.
