Instructions

  1. Preheat oven to 400°F (200°C). Wrap each beet in foil and roast on a baking sheet for 45-60 minutes until tender. Cool, peel, and slice thinly.
  2. Roll out the thawed puff pastry on a floured surface to about 1/8 inch thick. Cut into desired shapes and place on a parchment-lined baking sheet.
  3. Bake pastry for 15-20 minutes until golden brown and flaky.
