  • 8 oz fettuccine pasta
  • 2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tbsp olive oil
  • 1 cup low-sodium chicken broth
  • Fresh parsley for garnish

Instructions

  1. Slice the chicken into bite-sized pieces and season with Cajun seasoning.
  2. Cook fettuccine according to package instructions; reserve 1 cup of pasta water before draining.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add bell peppers and cook until tender.

  5. Stir in chicken broth and heavy cream; gradually add reserved pasta water until desired consistency is reached.
