  • ½ cup unsalted butter, cold and cubed
  • ¼ cup granulated sugar (adjust to taste)
  • ¼ tsp salt
  • 45 fresh figs, sliced
  • ½ cup pistachios, coarsely chopped
  • 2 tbsp ice water
  • Egg wash (1 beaten egg) – optional

Instructions

  1. Prepare the Dough: In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly. Gradually add ice water to form a dough. Wrap and chill for at least one hour.
  2. Prepare the Filling: Caramelize sliced figs in a skillet with sugar over medium heat for about 10 minutes until tender.
  3. Preheat Oven: Set oven to 375°F (190°C) and line a baking sheet with parchment paper.
  4. Roll Out Dough: On a floured surface, roll chilled dough into a 12-inch circle.
  5. Assemble Galette: Place dough on the baking sheet, spoon caramelized figs in the center, leaving edges free. Sprinkle with chopped pistachios.
  6. Fold and Bake: Gently fold edges over filling and brush with egg wash if desired. Bake for about 35 minutes until golden brown.
