Cauliflower Sweet Potato Burgers are a nutritious and flavorful alternative to traditional burgers.   • 1 head cauliflower (about 3 cups, chopped)
  • 2 medium sweet potatoes (about 2 cups, peeled and chopped)
  • 1 cup rolled oats
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Chop cauliflower into florets and sweet potatoes into chunks.
  2. Steam cauliflower and sweet potatoes in a pot for about 15 minutes until tender.
  3. In a mixing bowl, mash the steamed vegetables until smooth but slightly chunky.
  4. Stir in rolled oats, onions, garlic, cumin, salt, and pepper until well combined.
  5. Shape into six patties using your hands.
  6. Place patties on a greased baking sheet lined with parchment paper and bake for 25-30 minutes until golden brown.
