  • 23 boneless, skinless chicken breasts (about 1 pound)
  • 8 oz fresh mushrooms (button or cremini), chopped
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 sheet puff pastry (store-bought)
  • 2 tbsp butter
  • 1 tsp fresh thyme or parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, melt butter over medium heat. Sauté onions and garlic until translucent, then add mushrooms and cook until tender.
  3. Add diced chicken, season with salt, pepper, and herbs. Cook until chicken is no longer pink (about 8 minutes). Let cool slightly.
  4. Roll out puff pastry on a floured surface and cut into squares. Place filling in the center of each square and seal edges with a fork.
