Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 slices deli ham
  • 8 oz Swiss cheese, sliced
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil or melted butter
  • Salt and pepper to taste
  • 1 tbsp Dijon mustard (for sauce)

Instructions

  1. Preheat the oven to 400°F (200°C). Place chicken breasts between plastic wrap and pound to about half an inch thick.
  2. Season each breast with salt and pepper, layer with ham and cheese, then roll tightly like a burrito.
  3. Set up a dredging station: one bowl with seasoned flour, another with beaten eggs, and the last with breadcrumbs mixed with olive oil.
  4. Coat each rolled chicken breast in flour, dip in egg, then roll in breadcrumbs.
  5. Place on a greased baking sheet seam-side down. Bake for 25-30 minutes until golden brown and cooked through (internal temperature of at least 165°F).
  6. For the sauce, whisk together mustard and olive oil; adjust to taste.
  7. Let the chicken rest before slicing and serve drizzled with sauce.
