  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups lo mein noodles
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup carrots, julienned
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tsp cornstarch

Instructions

  1. Prepare your ingredients by slicing the chicken and vegetables.
  2. Boil water in a large pot and cook the lo mein noodles according to package instructions until al dente (about 4-5 minutes). Drain and set aside.
  3. In a large skillet or wok, heat oil over medium-high heat. Add sliced chicken breasts and season with salt and pepper. Cook for about 5-7 minutes until golden brown and cooked through.
  4. Add minced garlic, bell peppers, and carrots to the skillet. Sauté for another 3-4 minutes until the veggies are tender yet crisp.
  5. In a small bowl, combine soy sauce, sesame oil, and cornstarch; stir until smooth. Pour this mixture over the chicken and vegetables.
  6. Add the cooked lo mein noodles back to the skillet and gently toss everything together for about 2-3 minutes until well coated in sauce.
