  • 4 boneless, skinless chicken breasts
  • 1 cup fresh mozzarella cheese, shredded
  • 1 cup marinara sauce
  • 1 cup Italian-style breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper. Place each between plastic wrap and pound to about ½ inch thick.
  3. Spread marinara sauce on each chicken breast, top with mozzarella and basil, then roll tightly.
  4. Coat each roll in breadcrumbs and place seam-side down in the baking dish.
  5. Bake for 25-30 minutes until golden brown and cooked through. Serve with additional marinara sauce.
