  • 4 large poblano peppers
  • 3 boneless skinless chicken breasts (about 1 lb)
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup shredded Monterey Jack or Cheddar cheese (divided)
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté the onion and garlic until softened. Add the chicken breasts, season with salt, cumin, and chili powder; cook until no longer pink (7-10 minutes). Shred the chicken.
  3. In a bowl, combine shredded chicken with onions and half of the cheese.
  4. Slice each poblano pepper in half lengthwise and remove seeds. Generously stuff each pepper with the chicken mixture.
  5. Place stuffed peppers in the baking dish, top with remaining cheese, cover loosely with foil, and bake for 25 minutes.
  6. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden brown. Garnish with fresh cilantro before serving.
