  • 2 medium sweet potatoes (about 1 lb), peeled and diced
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp curry powder
  • 1 tbsp fresh ginger, grated
  • 4 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
