Scale
  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 8 oz rice noodles
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cups broccoli florets
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp freshly grated ginger

Instructions

  1. Prepare your ingredients by slicing the chicken into thin strips and chopping the bell peppers and broccoli into bite-sized pieces.
  2. Heat a tablespoon of oil in a large skillet over medium heat. Cook the chicken for about 5-7 minutes until golden brown and cooked through.
  3. In a small bowl, whisk together soy sauce, brown sugar, minced garlic, and grated ginger until smooth.
  4. Add chopped bell peppers and broccoli to the skillet with chicken. Stir-fry for another 3-4 minutes until vegetables are bright but still crisp.
  5. Toss in cooked rice noodles and pour the teriyaki sauce over everything. Mix well to coat all ingredients evenly.
  6. Serve immediately, garnished with sesame seeds or green onions if desired.
