  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 2 tbsp powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a mixing bowl, whisk eggs and granulated sugar until pale and tripled in volume.
  3. Gently sift together cocoa powder, flour, and baking powder; fold into the egg mixture carefully.
  4. Pour batter onto the prepared pan, spreading evenly. Bake for 12-15 minutes or until a toothpick comes out clean.
  5. Dust powdered sugar on a clean kitchen towel, turn the cake onto it, and carefully peel off parchment paper. Roll the cake while warm.
  6. Whip heavy cream with vanilla extract and powdered sugar until soft peaks form. Unroll the cooled cake, spread cream filling, then roll tightly again.
  7. Dust with cocoa powder or more powdered sugar before slicing.
